I purposely declined all shifts that were offered to me during the Harvest Festival just so I can have some free time. I was thinking of finishing some of my books and writing some posts on my travels and random thoughts but... Nope! None of that happened hahaha
Since Raya was approaching, I was busied with spring cleaning and I was going out every now and then since the list of stuffs that I have to shop for my family seem endless. So I was left only with some time to do one more of my favourite thing to do which is cooking! Yeay!
I tried this one on the Sunday before the Harvest Festival week. I already had the ingredients on our kitchen shelf for months and some of them were already near expiry so I had to materialize this Peanut Butter Brownies. My colleague baked one somewhere last year and I immediately text her asking for the recipe since it was so good! The original recipe is at this blog.
These are the ingredients for the two batters:
Chocolate Fudge Brownies
1 cup butter, melted and cooled
1 cup granulated white sugar
1 cup brown sugar
4 large eggs (I recently have this obsession with
Omega 3 so ya they were fortified eggs!)
2 tsp vanilla essence
1 cup all purpose flour
1 cup cocoa powder
1 tsp salt
2/3 roughly chopped chocolate
Peanut Butter Swirl
1 cup peanut butter
1/4 cup butter, melted and cooled
1/2 cup powdered sugar, sifted
1/2 cup salted peanuts
Done measuring and ready to be mixed!
The chocolate batter should be mixed with a hand whisk. Using an electric mixer will produce air pockets that will cause the brownies to become dry. So yeah this helps with keeping it moist and fudgy. Mix together the first six ingredients and then sift in the flour, cocoa powder and salt.
This was my first time manually mixing a batter so it was a bit of a struggle hahaha And I always hate sifting... Like why can't somebody just create flour and cocoa powder that doesn't need sifting!!! That's going to be very lucrative... Haha that's a silly thing to say for someone who studied in depth about properties of powder...
And lastly, add in the chopped chocolates. I used Cadbury chocolate and this was actually my third bar... The other two got eaten by my little brother... He always mistaken my cake ingredients as snacks 😪
The peanut butter batter was easier to mix since the texture of all the ingredients are smooth.
I used a 9" x 13" pan (newly bought lol)
This size will give the right thickness for the amount of batter.
I randomly placed the chunks of batter onto the pan and flattened it
Used a knife to make the swirl. But I overdid the right side that the peanut butter batter went beneath the choc batter haha
So this is the final product.
I set the oven at 175 C... I pre heat the oven while I was making the batter;
maybe for about 15-20 mins...
My oven took 30 mins to bake.
After 30 mins, I removed it from the oven to let it continue cooking inside the pan outside the oven for about 10 mins and finally I left it to cool at room temperature for another 15 mins.
Tadaaaaaa....
It was a bit too sweet for me. Sebenarnya sampai beristighfar sekejap while measuring the sugar.
tapi.. sedap lah! hahaha
